SEE BOTTOM FOR SEASONING MIX AND TIPS
Ingredients:
– oil to fry
– four to six tortillas
– two tbsp sour cream
– two large yellow potatoes
– seasonings
– a half cup shredded cheese
– two minced garlic cloves
– a fourth cup chopped cilantro
Procedure:
1. Peel and chop your potatoes into cubes and put them into a pan with water covering them
2. Boil until potatoes are tender (takes 20-25 minutes)
3. Mix seasonings, garlic, cilantro, sour cream and cheese
4. Drain and mash potatoes before adding in your mixture
6. Spread the potato mixture over your tortillas, then fry with oil on each side before folding them in half
Seasoning mix:
- 1.5tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cayenne chili pepper
Tips:
- Add in the seasoning mix a little at a time until it’s to your preference
- Use a higher heat to help avoid the taco from sticking
- Frying with plenty of oil also helps
- Mash your potatoes quickly after removing from heat to make it easier
